Samosa (foto e ricetta)
Una vicina di casa indiana tiene dei corsi “amatoriali” di cucina.
Ieri ho prodotti i miei primi samosa!!!!!
Ho visto che gia’ c’e’ la ricetta, ma vi posto anche la mia (inglese però)
Ingredients:
2 big potatoes boiled and cut into big pieces
1 small bowl of peas
¼ tsp cumin seeds
4-5 pieces of curry leaves
¼ tsp turmeric powder
1 tsp of garam masala (very important)
1 tsp of sugar (optional)
¼ tsp of lime juice
½ tsp of salt (a pinch of more if needed)
½ tsp of carom seeds
10 pieces of coriander seeds
For the dough:
2 full bowls of plain flour (200 gr)
2 tbsp of oil
1 cup of water Oil to fry
Pinch carom seeds
METHOD:
1. Take 1 tbsp of oil in the pan and the put cumin seeds and when they start crackling, add coriander seeds, dried curry leaves and red pepper
2. Then add potatoes, peas, salt, lime juice, sugar and then turmeric powder, garam masala
3. Let the mixture get mixed well and then switch off the gas.
per la pasta:
4. Take the flour now in a plate and add pinch of salt, carom seeds and 2 tbsp of oil and then add water slowly to make the dough.
5. Make small pieces of the dough, roll them into a circle.
6. Cut the circle in half, fold them into triangle and then fill the potato mixture in the triangle and seal it.
7. Make all samosas like this and then deep fry them on a slow flame
8. Serve them with chutneys or tomato ketchup or Indian masala tea
